A longstanding Denver locale that closed in November will be home to a new winery and restaurant by late summer. Carboy Winery, based in Littleton, is taking over the former Govnr’s Park Tavern at 7th Avenue and Logan Street. That restaurant shuttered along with its three sister spots at the end of 2018.
Carboy is in the midst of expansion, with one more winery and tasting room in Breckenridge and plans to produce up to 72,000 bottles of Colorado wine this year. The winery’s owners also run Angelo’s Taverna in Denver and Littleton.
Their Logan Street space will be home to a new wine bar and restaurant concept, with food made to be paired. The layout will include multiple event rooms, a tasting bar, retail wine shop, and outdoor patio. Carboy sources grapes, juice, and wine for blending from Colorado and beyond.
